Pathrado with coconut oil


PATHRADO  is a konkani delicacy ,prepared with Coclocasia /Arbi  leaves multi layerd with spices and steamed.Pathradi also called Patra in Gujarati and Aluchi vadi in Marathi. Konkanis love to eat this with lots of coconut oil .Tastes yummy with dal and rice.we also make phodi (fritter ) with yhis . But the masala is different.

INGREDIENTS:

20 arbi leaves /patrade paan/colocasia leaves( wash and cut the stems and veins)
For masala:
1/2 cup moong dal or moong
2 tsp dosa rice
2 cups fresh grated coconut
1 tsp hing powder
2 tsp tamarind pulp
Salt to taste
Soak dal and rice for2-3 hours and grind with other ingredients toa smooth paste with little water (batter consistancy little thicker than idli batter)

PROCEDURE:


  • On a flat surface place one big leaf with stalk end towards you.Spred lightly the masala over it and keep layering with other leaves .(around 8 leaves)
  • Fold the side ends about 2 inches  towards the centre
  • Smear the masala on the folds
  • Start rolling it fron bottom to form a tight log
  • Cut onto 2 inches rings and seam it in cooker or idli vessel  for 30 to 35 minutes
  • Serve hot with coconut oil
