Carrot Coconut Barfi


While preparing coconut barfi I just took a portion of it and tried this barfi.It was super tasty. So sharing the recipe with all of you.

INGREDIENTS:

2 cups grated coconut (you can also grind it with little milk)
1 1/2 cups sugar
1/2 cup milk
1/2 cup cashew nuts powdered(optional)
1/4 cup grated carrot
1 tsp cardamom powder
pinch of kesari colour(optional)

PROCEDURE:

  • Put all the ingredients in a pan and cook over a low  flame,until the mixture becomes fairly dry and forms a thick mass.
  • Add cardamom powder,kesari colour and mix well
  • Spread the mixture on a greased tray and cut into desired shape
