Raj Kachori

This yummy recipe belongs to Masterchef Sanjeev Kapoor!! I always love his recipes!!

Semolina (rawa/suji)1 cup
Refined flour (maida)1 tablespoon
Red chilli powder1/4 teaspoon
Saltto taste
Oilto deep fry
Potatoes,boiled (cut into 1 cm cubes)2 medium
Moong sprouts1/2 cup
Chickpeas (kabuli chana),boiled1/2 cup
Maide ki papdi10-12
Yogurt,thick1 cup
Dahi bhalle (lightly mashed)4
Roasted cumin powder1 teaspoon
Rock salt (sendha namak)1/2 teaspoon
Red chilli powder1 teaspoon
Tamarind chutney1/2 cup
Green chutney2 tablespoons
Sev1/2 cup
Fresh coriander leaves,chopped1/2 bunch
Make a stiff dough of suji, maida, red chilli powder and salt with water. Divide into four to six equal parts, roll into rotis of around five inches diameter and deep fry in hot oil on medium heat, turning once, till well puffed and crisp. After they cool down, ensure that they are not soft. If they are, fry again. Keep aside. Dip the papadi in dahi. Take one kachori in serving plate. Make a big hole in the centre. Fill with potato cubes, sprouted moong, boiled chana, papdi dipped in yogurt and mashed dahi bhalle. Sprinkle roasted cumin powder, rock salt powder, red chilli powder, tamarind chutney, yogurt, green chilli chutney, sev and coriander leaves. Serve immediately before it becomes soggy.
