Corn Mint Rice


INGREDIENTS:
1 cup basmati rice
2 sliced onions
6 tsp ghee or oil
whole garam masala (clove,cinnamon,bay leaf ,cardamom)
1/4 cup sweet corn
2 tblsp chopped mint leaves
2 tsp lime juice
Salt to taste
FOR MASALA:
2-3 green chillies
1/4 cup coriander leaves
1/2 inch ginger
4 garlic cloves
1/2 onion
1/2 tsp turmeric powder
grind these into a fine paste and keep aside

PROCEDURE:

  • In a cooker saute sliced onions and whole garam masala for 5  mnutes
  • Add masala and fry well
  • Put corn kernels and rice and fry for 5 minutes
  • Add chopped mint leaves,lime juice,Salt to taste and 1 1/2 cups water 
  • Close the lid and switch off the gas after 2 whistles
  • Add chopped coriander leaves and gently mix with a fork
  • Serve hot with raita
