Baby potato schezuan fry


This yummy recipe belongs to Chef Harpal Singh Sokhi!! In the original recipe he has used mutton .I tried it with potatoes as my daughter loves potato and we dont eat mutton!! This is one of the simplest n yummiest recipe!!So sharing it with all of you!!Thanku Harpal ji :)

INGREDIENTS:
Baby potatoes 20 nos
5 tsp oil
2 sprigs curry leaves
chopped coriander leaves
CHING'S SCHEZUAN CHUTNEY 4 tblsp
1 tsp soya sauce
1 tsp pepper powder
1/2 tsp red chilli powder
Salt to taste

FOR MARINATION:
1 TSP LIME JUICE
1 TSP SALT
1/2 TSP TURMERIC POWDER

FOR THE MASALA:
2 ROUGHLY CHOPPED ONIONS
5 GARLIC CLOVES
1/2 INCH GINGER PIECE
1 GREEN CHILLI
 crush this coarsely and keep aside (run the mixer for only on e second. Dont make fine paste)

PROCEDURE:

  • Boil the potatoes (dont over cook)
  • Peel the potatoes and marinate with the above ingredients and keep for 10 mins.
  • Heat oil in a non stick pan and add the masala and fry for 5-10 mins
  • Add marinated potatoes,soya sauce,pepper powder,salt to taste,chings schezuan chutney and red chilli powder and toss well
  • Garnish with Chopped coriander leaves and fried curry leaves
  • Serve hot with rice or phulkas.
