Poha upkari n Chane upkari
Poha Upkari and Chana upkari is a typical konkani breakfast combo!! We prepare this mostly on upvas days. this is a very traditional dish.Poha upkari is a spicy and little sweet ,masala poha with lots of grated coconut tempered with mustard and curry leaves.
POHA UPKARI INGREDIENTS:
2 cups fresh grated coconut (use white part only)
1 1/2 cups poha /beaten rice)
Salt to taste
For masala:
2 tsp coriander seeds/dania
1 tsp cumin seeds/jeera
1 green chilli
3-4 byadgi red chillies
jaggery or sugar to taste
salt to taste
Crush these ingredients .
For tempering:
3 tsp oil
2 tsp mustard
1 sprig of curry leaves
PROCEDURE:
- In a bowl mix coconut and the masala
- Add the tempering
- Mix poha and serve
CHAANA UPKARI INGREDIENTS:
2 cups soaked and boiled chana
Salt to taste
1/4 cup fresh grated coconut
FOR TEMPERING:
3 tsp oil
1 tsp mustard
curry leaves
3 chopped green chillies
1/2 tsp asafotida
PROCEDURE:
- In a kadai take oil and add mustard
- When it starts crackling add curry leaves,asafotida and green chillies and fry for a minute
- Add boiled chana and salt to taste with 1/2 cup water
- Add grated coconut and cook for 5- 10 minutes and serve with poha
