Capsi Baingan Masala

INGREDIENTS:
2 cups chopped brinjal/baingan
1 cup chopped capsicum
1 chopped onion
4 garlic cloves chopped
3 tsp oil
Salt to taste
Chopped coriander leaves for garnishing

  FOR THE MASALA:
In 2 tsp oil fry small piece of cinnamon,1 clove,1 elaichi,4 peppercorns,2 tsp coriander seeds,1/2 inch ginger,5 garlic cloves,4 byadgi or kashmiri red chillies,1 chopped onion,1 tomato,1 tsp khus khus (poppy seeds)1/2 tsp turmeric pdr
Fry the above ingredients till the onion becomes light brown and grind to a fine paste

PROCEDURE:
  • In a pan heat oil and saute chopped onion and garlic till light brown in colour
  • Add the chopped bangan and capsicum cubes,salt and cover with a lid
  • When it is half cooked add the masala paste n cook for another 5 mins 
  • Garnish with chopped coriander leaves and serve hot with phulks
  •
