Paneer Makhani Biryani

INGREDIENTS:
 250 gms paneer cubes
3 tblsp ghee/clarified butter
2 tblsp whole spices
1 large onion chopped coarsely
3 tblsp butter
2 cups fresh tomato puree
2-3 green chillies
3-4 garlic cloves
1 tblsp ginger crushed
1 tsp turmeric pdr
1 tsp cumin-coriander pdr
1 tsp tandoori masala1 tsp sugar
1/4 cup cashew paste
1/2 cup cream
salt to taste
6 cups cooked basmati rice
1/2 cup fried onion
chopped mint and coriander leaves

PROCEDURE:
  • Saute the paneer cubes in ghee with little salt and set aside
  • In same pan add the whole spices like cinnamon,cloves,black cardamom,green cardamom,black peppercorns and mace
  • As the spices crackle ,add the onions,green chillies,ginger garlic and fry for 2 mins
  • Add the powdered masalas followed by tomato puree.Simmer for 10 mins or so and add cashew paste and cream.Season to taste.
  • Add the paneer into it and mix and simmer for 6-8 mins
  • Using a greased baking dish or handi layer the paneer and cooked rice alternatively
  • Garnish with fried onons,chopped mint ,coriander leaves
  • Cover with alluminium foil heat gently for 25 mins and serve hot!!
