Potato Drumstick capsicum butthi

INGREDIENTS:
1 capsicum cut into cubes
1 drumstick shaved and cut into 2 inch pieces
2 potatoes cut into fingers
1 onion chopped finely
3 tsp oil
Salt to taste
FOR THE MASALA:
1/2 cup grated coconut
little tamarind
4 red chillies roasted in oil
1 tsp coriander seeds
Grind these into a semi coarse masala paste with little water
FOR THE TEMPERING:
2 tsp oil
1 tsp mustard
curry leaves
PROCEDURE:

1 tsp mustard

PROCEDURE:
- In a broad vessel cook potato and drumsticks with 1/2 cup water, salt and keep aside
- In a pan heat 3 tsp oil ,put chopped onion and saute till pinkish in colour
- Add capsicum chopped and cook with salt (dont overcook)
- Add cooked potato drumsticks,masala,salt to taste and cook for 5 more mins
- Temper with the ingredients and serve hot with roti or rice!!
