Bhindi Shahi Masala
INGREDIENTS:
250 gms bhindi/ ladys fingers/ okra
2 tsp +5 tsp oil
2 finely chopped onions
1 clove,small cinnamon piece
1 tsp ginger garlic paste
1/2 tsp turmeric pdr
2 tsp garam masala(I used malwani masala)
1 tsp red chilli pdr
2 tblsp fresh cream
2 tsp kasuri methi
Salt to taste
Chopped coriander leaves
To make paste:
2 tomatoes blanched
8 pistas or cashews(I used pistas)
PROCEDURE:
- Wash ,wipe the bhindis ,cut the ends and cut into 1 inch pieces
- In a pan put 2 tsp oil ,put the cut bhindi ,little salt and fry till it is cooked(You can also deep fry the bhindis)
- Transfer the bhindis into a bowl,in same pan put the remaining oil,add clove,cinnamon,chopped onions and fry till it becomes transparent
- Add ginger garlic paste and fry for 5 mins
- Put the tomato paste and fry till oil leaves the sides
- Add the spice powders one by one and fry for 5 mins
- Now add the fried bhindis,little water ,salt to taste and cream
- Give a quick boil,adding kasuri methi,garnish with chopped coriander leaves
- Serve hot with hot phulkas !!!
