THIS IS A COCONUT BASED CURRY PREPARED WITH ASHGOURD WHICH GOES WELL WITH RICE AND DAL ...THIS IS A TYPICAL KONKANI DELICACY !!
25o gms kuvale/ ashgourd
Salt to taste
FOR THE MASALA PASTE:
1 cup fresh grated coconut
1/2 tsp mustard
1 red chilli roasted in little oil
Grind the above ingredients into a paste (no need to make fine paste)
FOR THE TEMPERING:
3 tsp oil
1 tsp mustard
3-4 methi seeds
- Remove the skin of ashgourd and cut into medium chunks ,cook with 1/2 cup water and salt in cooker for 2 whistles
- Transfer the cooked ashgourd in a vessel,add the masala and water if needed and adjust the consistency
- Make it boil and temper with the mentioned ingredients
- Serve hot with white rice and dal or rasam !!!
