Barshi Upkari


INGREDIENTS:
1/2 Raw banana cut into big chunks
1/2 cup yam / sooran cut into big chunks
1/2 cup yellow pumpkin cut into big chunks
Salt to taste
Little jaggery  to taste

FOR THE MASALA PASTE:
3/4cup grated coconut
little tamarind
pinch of hing/ asafoetida
1/2 tsp turmeric pdr/ haldi
In 1/2 tsp oil roast 2 tsp urad dal , 1/2 tsp coriander seeds and 4 red chillies till it becomes light brown colour
Grind all the ingredients into a semi coarse masala and keep aside

FOR THE TEMPERING:
3 oil
1 tsp mustard
1 sprig of curry leaves

PROCEDURE:

  • Cook pumpkin with little water and salt (not in cooker)
  • Cook the yam and raw banana with 1/2 cup water and little salt in cooker for 2 whistles
  • Transfer all the cooked veggies in a broad vessel,add the masala paste,jaggery  and water if required 
  • Make it boil and add the tempering with the mentioned ingredients
  • Serve hot with rice and dal !!!
