Sweet corn rice with Bhindi raita


INGREDIENTS:
1 cup basmati rice
1/4 cup sweet corn pearls
1 big onion cut into slices
1 tsp turmeric pdr
5-6 tsp ghee or oil
chopped coriander and mint leaves

FOR THE MASALA:
1/4 cup coriander leaves
5 garlic cloves
1/2 inch ginger
2 green chillies
Salt to taste
Grind the above ingredients into a fine paste and keep aside

PROCEDURE:

  • Wash and soak basmati rice in water for 20 mins
  • In cooker heat oil,saute onion slices till translucent
  • Put the ground masala and fry until the raw smell goes
  • Drain water from soaked rice and put into the cooker  with turmeric pdr
  • Fry for 5 mins,add sweet corn ,salt to taste ,mix well
  • Add 1.5 cups water and cook for 2 whistles
  • Once the steam is released ,open the lid,add chopped coriander and mint leaves,serve hot with raita!!
BHINDI RAITA
INGREDIENTS:

15 nos Bhindi( okra)
1 cup fresh curd
1 green chilli
Salt to tatse
2 tsp oil+oil for deep frying
1 tsp mustard seeds
some curry leaves
Coriander leaves
1 tsp cumin seeds
Little hing(assafoetida)

PROCEDURE:

  • Wash,wipe bhindis and cut into thin rounds
  • Heat oil and deep fry bhindis into crisp 
  • Put the curd in a bowl and beat well
  • Add salt to taste and fried bhindis
  • Temper with mustard,curry leaves,green chilli,assafoetida and cumin seeds
  • Mix well and garnish with chopped coriander leaves
