Haryali Baby corn Curry


INGREDIENTS:
10 baby corn cut into 4 pieces
3 tsp oil
1 finely chopped onion
1/2 tsp amchur powder
Salt to taste
1 tsp kasuri methi
Chopped coriander leaves

FOR THE MASALA PASTE:
1 onion roughly chopped
4 garlic cloves
1/2 inch ginger
1/4 cup coriander leaves
1/4 capsicum
2 tblsp green peas
1 tsp daniya powder
1 tsp cumin powder
1/2 tsp turmeric powder
1/2 tsp garam masala powder
Roast all the above ingredients in 2 tsp oil and grind into a fine paste

PROCEDURE:

  • In a pan heat oil ,add baby corn  with little salt and saute for 5 mins or till  it becomes tender
  • Remove it from the pan and put in a bowl
  • In same pan put chopped onions and saute  till transparent
  • Add the masala and fry for 5 mins,add the sauteed corns,salt to taste,little water and cookfor 5 mins
  • Add kasuri methi,amchur powder and chopped coriander leaves ,mix well and turn off the flame
  • Serve hot with roti or naan .
Note:If you want you can also add little palak puree .
