Jolada Usli/ Sweet corn stir fry


INGREDIENTS:
1 cup jola / sweet corn kernels( boiled)
3 tsp oil
1 tsp mustard
1/4 tsp cumin seeds/jeera
1 sprig curry leaf
1 broked red chilli
Pinch of hing/ asafoetida
1 tsp lemon juice
2 tblsp chopped coriander leaves
Salt to taste

INGREDIENTS TO BE GROUND:
1/4cup grated fresh coconut
1 or 2 green chillies 
Coarsely ground the above ingredients without water

PROCEDURE:

  • Heat oil in a kadai,add mustard,once it crackles add curry leaves,red chilli bits,hing,jeera and fry for a second
  • Add the coconut paste,and saute for a minute
  • now drop in the boiled corn kernels,salt to taste and toss well
  • Check for the salt,garnish with chopped coriander leaves and lemon juice and turn off the flame
  • And your jolada usli is ready to serve with rice and dal.
