Kaarate God Nonche


This is a typical Konkani dish .Kaarate also called Bittergourd in English and Hagalkai in Kannada and Karela in Hindi.This is a spicy ,tangy and sweet pickle with karela and raw mango.Goes well with rice.

INGREDIENTS:
1 karela (bittergourd) chopped
1/4 cup raw mango pieces
jaggery to taste
Saalt to taste

For masala:
In 2 tsp oil roast 1 tsp coriander seeds,5 fenugreek seeds,3 tsp sesame seeds,little asafoetida,1 tsp mustard and 6 red chillies and grind to a fine paste
PROCEDURE:

  • Wash and cut karela into small pieces and apply 2 tsp salt keep for 1 hour ,squeeze and deep fry into brown and crispy
  • Cut raw mango and boil in 1 cup water 
  • When it becomes little soft add jaggery ,salt and masala and make it boil
  • Add fried karela and cook for 5 minutes
  • Temper in 3 tsp oil curry leaves and mustard 
  • Put this tempering to the pickle and serve
