Veg. kadai masala
INGREDIENTS:
1/2 cup boiled green peas
4 baby corns cut into 2 pieces
1/2 cup capsicum cut into cubes
1 small carrot cut into cubes
1/2 cup cauliflower florets
2 chopped onions
1 tsp ginger garlic paste
5 tsp oil
2 tsp coriander powder
1 tsp cumin powder
1/2 tsp turmeric powder
2 tsp chilli powder
2 tsp kasuri methi
1/2 cup milk
2 tsp grated paneer for garnishing
Chopped coriander leaves for garnishing
Oil for deep frying
Salt to taste
For masala:
3 tsp fresh grated coconut
2 chopped tomatoes
8-10 cashew nuts
1/2 onion chopped---Grind these into a fine paste
PROCEDURE:
- Wash and cut caulifower,baby corn and capsicum
- Deep fry them (you can also use boiled veggies)
- In a pan heat oil and saute chopped onions for 5 minutes
- Add masaa,ginger garlic paste and fry well
- Put all spices and fry for a minute
- Add boiled green peas and cerrot
- Add deep fried veggies
- Add salt to taste,kasuri methi and milk
- cook for 5 minutes ,add water if needed
- garnish with grated paneer and chopped coriander leaves
Note: using deep fried veggies gives an added taste to the gravy
