Hyderabadi Biryani

INGREDIENTS:
for the rice:
1 1/2 cup basmati rice washed and soaked in water for15 mins
1 cardamom
2 bay leaves
2 cloves
1/2 inch cinnamon
6 mint leaves
Salt to taste
4 cups water
Boil the water and put the soaked rice,salt and spices in it and cook the rice till it is cooked only 75%
Drain all the water and put in a strainer  and cool it 

For the vegetable gravy:
4 tblsp ghee or oil
1 +2 onions  sliced
1 tsp ginger garlic paste
2 slit green chillies
1/2 tsp turmeric pdr
1 tsp red chilli pdr
1 tsp biryani masala
1 tsp lime juice
1/2 cup cauliflower florets
chopped carrot,beans ,potato and fresh green peas altogether 1 cup
1/2cup curd
Salt to taste

For garnishng:
1/4 cup chopped coriander leaves and mint leaves
some cashew nuts roasted in ghee 
5-6 saffron strands soaked in 2 tblsp milk(you can also se saffron colour)

PROCEDURE:
  • In a pan heat oil or ghee and fry the 1 onion slices  till dark brown  and keep aside
  • In same ghee put the remaining onion slices and saute till transparent
  • Add ginger garlic paste,green chillies and fry for 3-4 mins
  • Put the veggies and cook with a lid covered
  • Add salt to taste,all spice powders,lime juice and mix well
  •  Now add the  curd and mix well
  • Now take one microwave safe bowl and put some prepared rice and spread it 
  • Put some vegetable gravy,chopped coriander and mint leaves and fried onion slices on it and repeat the same with the remaining rice and the gravy 
  • Finally garnish with the chopped coriander and mint leaves,fried nuts and saffron  soaked in milk
  • Micro it in MW for 3-4mins or keep in  preheated OTG  for 10 - 15 mins
  • Serve hot with any raita
