Punjabi style Gerkin Sabji
INGREDIENTS:
1 cup gerkin /tendle/thondekayi/ivy gourd slit into 4 pieces
4 tsp oil
2 finely chopped onions
1/2 tsp asafoetida /hing pdr
2 green chillies crushed
1 tsp ginger garlic paste
1/2 tsp turmeric pdr
1 tsp red chilli pdr
2 tsp daniya jeera pdr
1 tomato finely chopped
1 potato grated
2 tblsp peanuts roated and crushed
salt to taste
chopped coriander leaves
PROCEDURE:
1 cup gerkin /tendle/thondekayi/ivy gourd slit into 4 pieces

PROCEDURE:
- Cook the gekin in cooker onl for 1 or 2 whistles (dont over cook )
- In a kadai heat oil and put hing,crushed green chillies and ginger garlic paste and fry for 5 mins
- Add chopped onions and saute till it becomes translucent
- Put the grated potato ,salt and cook for 5 mins
- Add the chopped tomato and fry well ,till it becomes mushy
- Put all the spice powders,and fry for a minute
- Add the cooked gerkins,peanut pdr and toss well
- Garnish with chopped coriander leaves and serve hot with rotis
