Mango Murabba



This yummy mango murabba recipe belongs to my dear friend  Asha Satish Philar !! She is an expert  cook , and has written a cookery book too !!! Thanku so much Ashakka for the wonderful and perfect recipe :)

INGREDIENTS:
2 totapuri mangoes( mature but not over ripe)
1  cup water
1 3/4 cup sugar
2 strands saffron
1 inch cinnamon stick
1 tsp cardamom pdr

PROCEDURE:

  • Wash and immerse the mangoes in water for about 30 mins ...then wipe dry
  • Peel and cut into small cubes
  • Boil 2 cups  of water,add mango pieces to it and after a quick boil ,turn off the gas,cover the pan with a lid
  • Let the mango pieces steep in the hot water for about 2 mins.....then drain the water and spread them on a dry cloth
  • Combine the i cup water and sugar in a pan and prepare a thick sugar syrup( a drop on a board should retain its shape)
  • Add the cinnamon stick, saffron ,mango pieces to the syrup and cook murabba over low  flame until the syrup thickens a little more
  • Add the cardamom powder, allow the murabba to cool
  • Pour it in a clean dry jar and your yummy murabba is ready to serve !
