Andhra style chicken biryani
INGREDIENTS:
1 cup basmati rice wash and soak in water for 20 mins
5 tsp ghee or oil
whole spices like
2 lavang/clove
1/2 inch cinnamon/dalchini
1 bay leaf
1/2 tsp pepper corns
1black cardamom/ badi elaichi
Salt to taste
PROCEDURE:
- In a cooker heat ghee/oil ,add whole spices and saute for 2mins
- Drain water from rice and add to it and fry for 5 mins
- Add salt ,1 1/2 cups water ,close the lid
- Cook for only 2 whistles
Ingredients for the masala:
3 chicken leg pieces
3tblsp curds
1 tsp turmeric pdr
1 sp coriander pdr
1/2 tsp cumin pdr
1/2 tsp pepper pdr
2 tsp red chilli pdr
1 tsp biryani masala
Salt to taste
Wash and clean the chicken and marinate with the above mentioned ingredients for minimum 20 mins
Make a paste of :
5-6 mint leaves
2 green chillies
1/4 cup coriander leaves
5 garlic cloves
1/2 inch ginger
5 tsp oil
2 chopped onions
1/4 cup coriander leaves

PROCEDURE:
- In a pan heat oil ,saute onion slices till light brown in colour
- Add masala paste and fry till it looses raw smell
- Add marinated chicken and cook till chicken becomes tender
- Add little water only if needed
- Once the chicken masala becomes dry add the cooked rice ,lime juice,and toss well
- Garnish with fried cashew,coriander leaves and servehot with any raita of your choice!!
