Vegetable Sevaiya
INGREDIENTS:
1 cup cooked sevaiya/ vermecelli ( follow the instructions on the pack)
1/2 cup finely chopped veggies likecarrot,beans,capsicum
2 tblsp sweet corn kernels
2 tblsp fresh green peas
5 tsp oil
2 onions chopped
1 tsp jeera/ cumin seeds
3 slit green chillies
1 sprig curry leaf
1/2 tsp turmeric pdr
1/2 ginger finely chopped
Salt to taste
2 tsp lemon juice
Chopped coriander leaves
PROCEDURE:
- Spread the cooked vermicelli on a plate,adding salt and keep aside
- Heat oil in a kadai,add jeera,curry leaves,green chillies and fry for 2 mins
- Drop in the chopped onions,fry until transparent,followed by chopped carrot,beans and green peas
- Add little salt and cook with a lid covered till the veggies are cooked
- Now add corn kernels and capsicum chopped and saute for 5 mins
- Add turmeric powder, chopped ginger and toss well
- Now add the cooked sevaiya ,salt to taste and lemon juice
- Toss well ,garnish with chopped coriander leaves and serve hot!!!
