Baingan ka Bharta with Phulkas
INGREDIENTS:
1 large brinjal / baingan
2 -3 tblsp oil
2 large onions finely chopped
2 tomatoes finely chopped
2 green chillies finely chopped
1/2 inch ginger finely chopped
6 garlic cloves finely chopped
1 tsp red chilli powder
1/2 tsp turmeric powder
2 tsp daniya jeera powder
1 tsp garam masala
Salt to taste
Chopped coriander leaves
PROCEDURE:
- Wash the brinjal, grease it with little oil and roast it over an open flame till it is cooked
- Once it becomes cool, peel the skin ,mash the pulp thoroughlyand keep aside
- Heat oil in a pn ,add chopped onions and saute till they turn golden brown
- Add ginger , garlic and green chillies ,saute for 2 mins
- Add chopped tomatoes and cook till they turn mushy
- Add all the spice powders one by one and saute for a few more seconds, till the mixture leaves oil
- Add mashed brinjal, garam masala ,salt ,fry well for 5 mins
- Check for the salt and garnish with chopped coriander leaves
- Serve hot with hot phulkas
