Kaarate Upkari / Bittergourd Dry Sabji



INGREDIENTS:
1 big kaarate/ hagalkayi/ bittergourd/ karela
2- 3 slit green chillies
1/2 tsp turmeric powder
1 tsp red chilli powder
1 sprig of curry leaves
2 tsp urad dal
1 tsp mustard
4 tsp oil
Jaggery to taste
1 tsp tamarind paste
Salt to taste
1/2 cp fresh coconut gratings

PROCEDURE:

  • Wash and scrape the karela ,cut into 4 pieces (lengthwise) and chop it into thin slices
  • Apply little salt and keep for 20 mins
  • Squeeze water from karela and cook it in cooker with slit green chillies,turmeric powder ,salt,tamarind and 1/2 cup water
  • cook it for 1 whistle
  • In a pan heat oil,add mustard.Once it crackles add curry leaves ,urad dal and fry till dal becomes light brown
  • Add red chilli powder ,saute for a second,add cooked karela,jaggery and cook for some time
  • Now add the coconut gratings and cook until it becomes dry
  • Serve with rice and dal
