Kaarate Talasani / Bittergourd curry
INGREDIENTS:
2 bittergourds / karela / hagalkaayi / kaarate
6-8 bimbul / tree sorrel
5 slit green chillies
Salt to taste
Jaggery to taste
FOR THE TEMPERING:
3 tsp oil
6-8 crushed garlic cloves
1 red chilli bits
PROCEDURE:
- Wash and scrape the outer skin of karela and cut into half,then cut into thin slices
- Apply salt and keep aside for 30 mins, squeeze the karela pieces after 30 mins ,add chopped bimbul,slit green chillies and cook in cooker with 1/2 cup water for 2 whistles
- Heat oil in a pan,add crushed garlic cloves and red chilli ,fry till garlic turns brown
- Add the cooked karela,alt,jaggery and give one boil
- Serve hot with rice.
