Mushroom Fried Rice with Gobi Manchurian



INGREDIENTS FOR FRIED RICE:
2 cups rice
1/2 cup finely chopped carrot,beans and capsicum
6 mushrooms3 sliced spring onion bulbs
1/4 cup finely chopped spring onion greens
1 tsp vinegar
1 tsp pepper pdr
1 slit green chilli
4 garlic cloves chopped
Salt to taste
6 tsp oil
PROCEDURE:

  • Wash and cook rice with salt to taste and 3 1/2 cups water in cooker for 2-3 whstles(dont overcook )
  • Spread rice on a plate and make it cool
  • In a kadai heat oil ,add chopped garlic,green chilli and spring onion bulbs chopped
  • Saute for a while on high flame,add veggies,salt and cook for 5 mins
  • Add sliced mushrooms and fry for a second
  • Add rice,vinegar, pepper pdr and toss well
  • Garnish with spring onion greens!!
GOBI MANCHURIAN INGREDIENTS:

1 cup gobi / cauliflower cut into florets and put in warm water with salt for 15 min
5 tsp oil = oil for deep frying
1 onion chopped
1 green chilli chopped
5 garlic cloves finely chopped
1/2 inch ginger chopped
2 tsp tomato ketchup
2 tsp red chilli paste or chilli pdr
1 tsp soya sauce
1 tsp vinegar
2 -3 tsp CHINGS CHILLI MASALA PDR
Salt to taste
Chopped coriander leaves for garnishing

FOR THE MARINATION:
4tblsp corn flour
2 tblsp rice flour
1 tsp chilli pdr
Salt to taste
Make a paste of these ingredients ,marinate the  gobi florets   and deep fry into crisp fritters and keep aside

PROCEDURE:
  • In a pan heat oil ,fry garlic,ginger and green chillies chopped till light brown in colour
  • Add onion chopped and saute for a while,followed by red chilli paste and fry for 2 mins
  • Add soya sauce,ketchup,vinegar,and mix well
  • Add Chings masala pdr, 1/4 cup water and salt to taste 
  • Add the fried gobi  fritters and toss well,check for the salt and garnish with chopped coriander leaves
  • Serve hot with any rice or noodles!!!
