Anjeer and Khajoor Barfi
INGREDIENTS:
1 cup dried figs / anjeer
1 cup deseeded dates / khajoor
15 almons / badam
15 kaaju / cashew nuts
1/4 cup pumpkin seeds
10 pistachios
1 tsp ghee
1/4 cup tiny cashew bits or khus khus
PROCEDURE:
- Chop finely dates and figs and keep aside
- Chop almonds, cashew nuts,pistas and toast them separately
- In a pan heat ghee, add chopped anjeer and dates and mix well stirring continuously for 5 mins
- Turn off the flame and transfer it on a plate
- Add the toasted nuts to the dates and anjeer mixture, combine well
- Shape it into a cylinder as shown above
- Roll it in toasted khus khus or cashew bits (this is optional)
- Leave it for 15 mins and then cut into discs
- Store in an airtight container
