Mushroom fried rice with Paneer chilli gravy and Garlic mushroom tava roast
INGREDIENTS:
For fried rice:
1 cup bullet rice or sona masoori
4 tsp oil
4 finely chopped garlic cloves
5 mushrooms sliced1/2 cup finely chopped veggie like,carrot,capsicum
1 onion finely chpped
1 tsp vinegar
1/2 tsp pepper pdr
Salt to taste
2 tblsp finely chopped spring onion greens
PROCEDURE:
- Wash rice and cook in cooker with salt to taste and 2 cups water. Cook for 3 whistles
- Once cooked spread it on a plate and keep aside
- Heat oil in a kadai, add chopped garlic and saute for 2 mins, followed by sliced onions
- Saute for 2-3 mins on a high flame,add veggies with little salt and cook for 2-3 mins
- Don't overcook the veggies, it should be crunchy.
- Add sliced mushrooms and saute for 2-3 mins
- Now add the cooked rice,vinegar,pepper pdr, and toss well
- Finally garnish with chopped spring onion greens and serve hot.
INGREDIENTS FOR PANEER CHILLI GRAVY:
1 cup chopped veggies like carrot, beans,capsicum
1/2 cup paneer cut into cubes
1 onion (cut into big dices and separate the layers)
1 slit green chilli
1/2 inch ginger finely chopped
6 garlic cloves chopped
4 tsp oil
2 tsp soya sauce
1 tsp tomato sauce
1/2 tsp vinegar
1 tsp CHING'S Chilli masala powder or manchurian masala
1 tsp CHING'S Schezuan chutney
Salt to taste
2 tsp corn flour
Finely chopped spring onion greens for garnishing
PROCEDURE:
- Heat oil in a pan ,put chopped garlic,ginger, green chillies and saute for 2 mins
- Add chopped onion and saute for 2-3 mins , followed by carrot, beans . Cook on a high flame for 3-4 mins, now add capaicum and saute for 2 mins, add salt to taste
- Put soya sauce, tomato sauce, vinegar, Chings schezuan chutney , mix well and add 1/2 cup water and mix
- Add paneer cut into cubes.
- Add water according to your taste ,if u want dry no need to add water
- If you want more gravy then increase the quantity of water
- Add Ching's masala powder. Mix corn flour in 1/4 cup water and add to it and let it boil
- Once the gravy thickens, boil it for 2-3 mins on a low flame , garnish with spring onion greens and turn off the flame
- Serve hot with fried rice or noodles and enjoy.
- You can substitute veggies with paneer, mushrooms,prawns or chicken.
INGREDIENTS FOR MUSHROOM TAVA ROAST:
10 mushrooms
1/2 tsp lemon juice
Salt to taste
chilligarlic paste as per taste
2 tblsp rice flour
Oil for roasting
For the chilli garlic paste :
5 large garlic cloves
6 byadgi or Kashmiri red chillies (you ca also use chilli powder as per your taste)
3/4 tblsp vinegar
1/2 tsp sugar
Salt to taste
Grind the above ingredients into a smooth paste and keep aside

note: You can store this paste in the freezer for 8 to 10 months . It can be used to prepare many chinese dishes.
PROCEDURE:
- Wash the mushrooms,remove the stem and pat them dry .
- Marinate with little salt,chilli garlic paste as per your taste and lemon juice.
- Keep covered for 5 mins.Roll each mushrooms in rice flour and roast on tava ,adding oil
- Roast on a medium high flame, if you roast on low flame mushrooms n=may leave its water
- Flip it and roast both the side, serve hot with rice.
