Biryani Masala Powder






INGREDIENTS:
3 dry red chillies
2 tblsp coriander seeds/ daniya
1 tblsp cumin seeds/ jeera
6 bay leaves/ tej patta
1 tblsp caraway seeds/ kala jeera/ shahi jeera
2 mace/ javitri
2 inch piece cinnamon/ dalchini
1 nutmeg / jaiphal
1 tsp cloves/ lavang
3 badi elaichi / black cardamom
3 star anise / chakra phool
8 green cardamom / elaichi
1 tblsp pepper / kaali mirch
1 tsp saunf/ fennel seeds
1/2 tsp turmeric/ haldi

PROCEDURE:

  • In a thick bottomed kadai roast red chillies and bay leaf ,till they turn crisp. Keep it aside.
  • Dry roast all the other ingredients (except turmeric powder) till they turn aromatic.
  • Allow it to cool and transfer it to the blender,add turmeric powder.
  • Blend the ingredients into a fine powder and transfer it to  an airtight container.
  • Store in an airtight container and use it for making biryanis or pulav.
