Lemon Coriander soup


3 tblsp lime juice
4 tblsp coriander leaves chopped
3 tsp oil
 5 garlic cloves finely chopped
1/2 cup sliced carrot
1 inch chopped ginger
7-8 peppercorns crushed
6 cups vegetable stock
Salt to taste
3 tsp cornflour mixed in 1/4 cup water
2 tsp spring onion for garnishing


  • In a saucepa put oil and saute chopped garlic,ginger for 2 minutes
  • Add carrot slices and cover the lid and cook
  • Add vegetable stock,salt,chopped coriander leaves, and cornflour slury and make it boil 
  • Boil it till it becomes thick
  • Finally add lime juice and garnish with spring onion and add freshly crushed peppercorns and serve hot.
