Egg Fried Rice

  INGREDIENTS: 1 cup rice (uncooked) 6 tsp oil 1 finely chopped green chilli 5 finely chopped  1/2 inch ginger finely chopped 1/2 tsp pepper powder 1 tsp soya sauce 1 tsp vinegar 1 small carrot finely chopped 8 french beans finely chopped 2 tblsp finely chopped capsicum 2 tblsp finely chopped spring onion greens 2 eggs Salt to taste PROCEDURE: Wash rice well, add 2 cups water,1 tsp salt and 1 tsp oil and cook in the cooker for 3 whistles Once it is cooked, spread it on a plate and let it cool Break the eggs in a bowl and keep aside To be cooked on high flame. Heat oil in a pan, add chopped garlic, ginger,green chilli and fry till it is lightly fried. Add chopped veggies and fry them till they wilt off. For about 2-3 mins. Reduce the flame to medium, make some space on the pan and  pour the eggs and scramble them. Cook till they are lightly done.  Sprinkle salt,crushed pepper.   INGREDIENTS: 5 hard boiled eggs 3 tblsp coconut oil / any other refined oil 3 thinly sliced onions 1 tsp mustard 2 sprig of curry leaves 2 grated tomatoes 1 tsp ginger garlic paste 1/2 tsp turmeric/ haldi powder 1 tsp garam masala powder 2 slit green chillies 1 tsp coriander powder 1/2 tsp cumin powder 3 tblsp ground chilli masala  paste Salt to taste 1/2 tsp sugar Chopped coriander leaves FOR THE MASALA PASTE: 8 byadgi red chillies 1/2 tsp coriander seeds/daniya seeds 1/4 tsp jeera/ cumin seeds 4 pepper corns 3 garlic cloves Deseed the red chillies,soak in water for 10 mins and grind with other ingredients into a smooth paste. FOR THE MASALA PASTE: 20 byadgi or Kashmiri red chillies 1 tsp coriander / dhaniya seeds 1/2 tsp jeera / cumin seeds 4-5 pepper corns 3-4 methi / fenugreek seeds 6 garlic cloves small goosberry size tamarind Salt to taste PROCEDURE: Deseed the red chillies and soak in water for 20 mins  and grind with the other ingredients into smooth paste adding water INGREDIENTS FOR  EGG GHEE ROAST: 4 hard boiled eggs 1/2 tsp turmeric powder 1/4 cup curd Salt to taste 3 tblsp ghee Masala as required Chopped coriander leaves for garnishing PROCEDURE: Remove the shell of the eggs,and make cuts on it or you can cut them into halves or four pieces too. Egg curry with Coconut milk

INGREDIENTS: 4 eggs boiled and cut into halves 2 tblsp oil 1 finely chopped onions 1 slit green chilli 1/2 tsp turmeric powder 1 tsp garam masala powder 1/2 tsp coriander powder 1/2 cup coconut milk Salt to taste Chopped coriander leaves FOR THE MASALA: In half cup water boil 1 roughly chopped onion,3 garlic cloves,5 cashew nuts,1/2 inch ginger for 10 mins. Once it comes to room temperature grind into a fine paste and keep aside PROCEDURE: In a pan heat oil,saute chopped onions till light brown,add the slit green chilli, ground masala and fry for 5 mins Add the turmeric poder,coriander powder and garam masala powder,fry for 2 mins Add the coconut milk,boiled eggs,salt to taste and give one quick boil Garnish with coriander leaves and serve hot with rice or rotis I had used Maggi coconut milk powder .

INGREDIENTS: 8 nos boiled eggs 10  nos byadgi / Kashmiri red chillies 7 garlic cloves 2 inches ginger piece Small piece tamarind 1 chopped onion 1 handfull curry leaves 6-8 tsp oil Salt to taste Chopped coriander leaves PROCEDURE: In little oil roast the red chillies and grind with garlic, ginger and tamarind into a fine paste Heat oil in a pan ,fry curry leaves and chopped onion for a while Add ground paste ,fry till raw smell dissappears Add salt and little water to form a thick gravy Add the boiled eggs and stir fry for 5 minutes Garnish with chopped coriander leaves Serve hot with roti or ghee rice!!!

INGREDIENTS: 2 eggs 1 onion finely chopped 2 tblsp finely chopped capsicum 2 tblsp finely chopped tomato (deseeded) 2 finely chopped green chillies 2 tblsp finely chopped coriander leaves salt to taste Pepper pdr Oil for cooking PROCEDURE: Break the eggs and put in a bowl Add the other ingredients except oil and pepper pdr Beat well and make omelette and sprinkle some pepper pdr before serving Serve with a slice of bread 

Anda Shahi Masala

INGREDIENTS: 3 boiled eggs cut into 2 pieces 4 tsp oil 1 chopped onion 3 blsp tomato puree 2 tsp red chilli pdr 1 tsp garam masala pdr 1/2 tsp turmeric pdr 2 tsp kasuri methi 2 tblsp fresh cream Chopped coriander leaves FOR THE MASALA: 2 sliced onions deep fried 4 garlic cloves 1/2 inch ginger Grind the above into a fine paste PROCEDURE: In a pan heat oil  and saute onion chopped till ligh tbrown in colour Add tomato puree ,masala paste and fry well till the raw smell goes Add all the spice powders and fry for 2 mins Put the eggs ,salt to taste and 1/2 cup water Make it boil  and put fresh cream and kasuri methi and mix well Finish it with chopped coriander leaves Serve hot with roti or rice

INGREDIENTS: 6 boiled and peeled eggs 6 tsp oil 2 onions chopped 2 tomatoes chopped 1/2 tsp turmeric powder 3 tsp red chilli powder Salt to taste Chopped coriander leaves for garnishing FOR THE MASALA: masala 1 Dry roast 2 tsp coriander seeds,1 tsp cumin seeds,2 cloves,1/2 inch cinnamon,1 caramom,1/2 tsp poppy seeds(khus-khus),5 pepper corns In 1/2 tsp oil fry 1 chopped onion and grind it with 1/2 inch ginger and the above ingredients into a fine paste. for green masala: grind 1/2 cup coriander leaves,2 green chillies,4 garliccloves,little mint leaves(optional) PROCEDURE: In a pan heat oil and saute chopped onions till translucent. Add chopped tomatoes and fry till it becomes mushy. Put the masala no 1 and fry for 3 minutes Add masala no 2 and fry for 5 minutes Add turmeric powder,chilli powder and fry Put the boiled eggs,salt and water and adjust the consistency according to your taste. Cook for 5 minutes and garnish with coriander leaves.
