Caramel Coffee Cake

INGREDIENTS: 1 cup butter 2 cups all purpose flour/ maida 1.5 cups powdered sugar 1 tblsp instant coffee powder 1/2 tsp cooking soda Pinch of salt 4 eggs 1 tsp vanilla essence # tblsp caramel TO MAKE CARAMEL: Put one cup sugar in a pan and cook till sugar melts , once it mekts and turns dark brown, lower the flame and slowly add 3/4 cup of water and boil again for 3-4 mins. Use when it  is completely cooled down. Store the remaining caramel in the fridge. PROCEDURE: Separate the egg yolks and beat the egg whites well Seive the flour with salt,coffee powder and cooking soda , twice and keep aside. Beat the butter with sugar till it becomes smooth, add vanilla essence and mix well Add the beaten eggs to the butter, sugar mixture and give a nice stir Add the flour to that mixture and just fold in, followed by egg yolks and caramel Pour the batter in a greased alluminium tray  Bake it in a pre heated oven (OTG) at 180 degrees for 35- 40 mins After 40...

Choco Chip Muffins

INGREDIENTS: 1 cup butter 2 cups maida/ all purpose flour 1.5 cups sugar powder 2 tblsp cocoa powder 1/2 tsp cooking soda Pinch of salt 1 tblsp choco chips 4 eggs 1 tsp vanilla essence PROCEDURE: Separate  the egg yolks and beat the egg whites well Seive the flour with cooking soda,salt and cocoa powder and keep aside. Beat butter and powdered sugar until it becomes a smooth paste. Add vanilla essence give a nice stir Add beaten egg whites to the sugar and butter mixture. Now add the flour and just fold in Finally add egg yolks and give a mix. Transfer the batter onto the muffin moulds (fill only 3/4 of the mould) Garnish with chocochips and bake in the preheated oven, at 180 degrees for 30-40 mins After 40 mins check with a knife, if it comes cleanthen the cake is ready .

Cake Ice-cream with Praline

INGREDIENTS FOR PRALINE: 4tblsp sugar 10- 12 cashew nuts or almonds (you can also use walnuts or pecans) 2 tblsp unsalted butter PROCEDURE: Roughly chop or crush the nuts. Grease one plate and keep ready or use butter paper or alluminium foil Take butter in a pan ,keep on a low flame. Add sugar when butter begins to melt. Mix sugar with butter and cook on a low flame Stir at intervals.No need to stir continuously. The mixture will begin to change its colour. When it becomes golden brown add the crushed nuts and turn off the flame Mix well and pour it on the greased plate or butter paper Let it harden and cool Once it is completely cool, break it into pieces and crush it into a coarse mixture Store it in an airtight container and use it as toppings on ice-creams, cakes or pastries and enjoy!!! INGREDIENTS: 1 cup butter 2 cups maida 1.5 cups sugar powder 1/2 tsp cooking soda Pinch of salt 4 eggs 1 tsp vanilla essence 100gms  any milk chocolate (I used 8 Kisses chocolates) 2 tblsp milk 1 tsp butter PROCEDURE: Melt the chocolate in microwave with 2 tblsp milk and 1 tsp butter  and keep aside Separate the egg yolks and beat the egg whites  Seive the flour with salt and cooking soda and keep aside Beat butter and sugar powder together till it becomes smooth mixture Add the beaten egg whites to the butter and sugar mixture, mix well Now add the flour and just fold in the mixture Finally add vanilla essence, egg yolks and give a nice mix Once the batter is ready ,remove one cup batter in a bowl and add chocolate sauce to it and stir until combined well Grease on alluminium pan and dust it with little flour Pour the yellow batter in the greased pan , spoon chocolate batter on top ,using a knife or toothpick swirl two...

INGREDIENTS: 1 cup atta / wheat flour 1/2 cup besan/ bengal gram flour 1/4 cup semolina/ fine rava 2/3 cup ghee 2/3 cup powdered sugar 1 tsp baking powder 1/2 tsp cardamom powder PROCEDURE: PROCEDURE: Take ghee and sugar powder in a bowl and beat well, untill it becomes smooth Seive the dry ingredients maida,besan,rava,baking powder  Add the seived dry ingredients to the ghee and sugar mixture Knead the mixture to make a smooth dough The mixture to make cookies is ready . Take small portion of the mixture ,roll it with hands to make a round ball. Press the ball by keepng it under the two palms, keep the chopped nuts  in the center of the cookies and press gently Place the cookies on a greased plate keeping little distance. Heat one thick bottomed kadai, spread a cup of salt (optional) and preheat for 10 mins. Almond Biscotti

Bicottis are an Italian biscuits that originated in the Tuscan city of Prato.They are twice baked , oblong shaped,crunchy, dry and may be dipped in coffee and tea. INGREDIENTS: 1 cup all purpose flour / maida (150 gms) 5 tblsp sugar (62.5 gms) 5 tblsp butter (70.94 gms) 1 tsp vanilla essence 1/2 tsp baking powder 1/2 tsp cooking soda 2 tblsp chopped almonds (10 gms) 1-2 tblsp milk (30 gms) PROCEDURE: Seive maida with baking powder and cooking soda and keep aside Take butter,sugar in a bowl and whisk till sugar dissolves and it turns creamy and smooth. Now add vanilla essence and dry ingredients to the wet ingredients and combine till it forms sticky dough. Add in chopped almonds and milk and combine well. IINGREDIENTS: 1 cup Wheat flour / gehun ka atta (125 gms) 1/4 cup besan / Bengal gram flour (25 gms) 2 tblsp fine rava / semolina  3/4cup sugar powder (100 gms) 1/2 cup + 1 tblsp ghee (100 gms) 1/2 tsp elaichi / cardamom pdr 1tsp baking pdr 1 tblsp slivered almonds or cashews PROCEDURE: Take ghee and sugar powder in a bowl and beat well, untill it becomes smooth Seive the dry ingredients maida,besan,rava,baking powder  Add the seived dry ingredients to the ghee and sugar mixture Knead the mixture to make a smooth dough The mixture to make nankatai is ready , Take small portion of the mixture ,roll it with hands to make a round ball. Peanut Butter Cookies

INGREDIENTS: 1 cup sugar (200 gms) + 1/4 cup (50 gms) for rolling 1/2 cup butter (112 gms) 1 cup (250 gms) peanut butter 1 tblsp vanilla extract 1.5 cups(190 gms) all purpsose flour 1 tsp baking soda 1 tsp baking powder 1/2 tsp salt 1 tblsp milk PROCEDURE: Take sugar and butter in a bowl and beat well, until creamy Add peanut butter, vanilla extract and mix in In a separate bowladd flour, baking soda,baking powder and salt add the dry ingredients to the wet ingredientsand mix in(don't use electric mixer for this part) Test the cookie dough trying to roll some into a ball. If it holds togetherperfectly thenn you are good to go If it crumbles and won't hold together, thenadd in 1 tblsp milk and test it again. Butter Cookies

INGREDIENTS: 1/2 cup butter 1/2 cup sugar powder 1 cup maida/ all purpose flour 3 tsp cashew bits (optional) Pinch of cooking soda PROCEDURE: Take butter in a mixing bowl, add powdered sugar and mix well Add maida and cooking soda , mix again  Make a soft dough  Preheat the oven for 10 mins Make small balls of the dough and press it with a fork Place the cookies on a greased tray and bake it at 180 degrees for 15 to 20 mins Enjoy the cookies with your cup of tea.

Eggless Chocolate Mug Cake

INGREDIENTS: 3 tblsp all purpose flour / maida 3 tblsp sugar 1/4 tsp baking pdr or cooking soda 2 tblsp cocoa pdr 3 tblsp melted butter (I used refined oil) 3 tblsp milk 3 tsp choco chips 1/4 tsp vanilla essence PROCEDURE: Take one microwave safe mug , put maida, sugar, baking pdr,cocoa pdr Now add the wet ingredients, milk,melted butter, choco chips,vanilla essence With the help of a fork mix well  Micro it for one minute 20 seconds on a high heat Remove the mug , insert one knife and check if it is baked. If the knife comes out clean it is ready to eat If not then again micro it for 20 to 30  seconds  Enjoy the cake  with vanilla icecream and chocolate sauce

Ragi / Finger millet cookies

INGREDIENTS: 1/2 cup ragi floiur / nachi / finger millet flour 1/2 cup wheat flour  5 tblsp sugar or 1/2 cup powdered jaggery 1/2 to 3/4 tsp baking pdr 1/4 tsp cardamom pdr 6 to 8 tblsp melted ghee  2 tblsp milk if needed PROCEDURE: In a bowl put ragi flour, wheat flour,baking pdr and cardamom pdr, mix well until well combined Pour the ghee to the flour mixture and begin to mix well until combined. If the dough doesnt come together put 1 or 2 tblsp ghee or milk and mix well I used only 6 tblsp of ghee Bring the dough together and make a ball. Cover and keep in the fridgefor 30 mins Prehea the oven to 170 degree C for 15 mins Devide the dough into small balls.Flatten them slightly and press down with a fork Place them on a baking tray , one inch apart from the other as they become big after baking Bake the cookies for 12 15 mins depending on your oven and thickness of the biscuits Once they are baked transfer them to a wire rack and cool completely.Store...

Vanilla Choco Cookies

INGREDIENTS : 3/4 cup brown sugar 1/3 cup powdered sugar 1 1/4 cup maida 1/2 cup choco chips 1/2 cup melted butter 1/2 tsp cooking soda 1 egg PROCEDURE: In a bowl beat  brown sugar, powdered sugar and melted butter until light and fluffy for about 5 mins In anoter bowl beat te egg and vanilla essence  Mix te egg , vanilla mixture with the butter and sugar mixture Seive flour and cooking soda ,gradually add the flour to te above mixture, beating just until blended Stir in cocolate chips,scoop individual portions of cookie dough on to the lined baking tray and arrange the cookies on it evenly, leaving enough space between themso tey ave room to expand during baking Bake the cookies in preheated oven for 10 to 15 mins, until the centre of the cookies slightly soft but the edges are crisp and golden Remove from the ovenand allow to cool on the trayfor ten mins before serving Store in an airtight container

Nankatai

INGREDIENTS: 3/4 cup all purpose flour / maida 2 tblsp besan / chick pea flour 1/2 cup powdered sugar 1/2 cup ghee 1/2 tsp baking soda 1/4 tsp cardamom pdr Nuts finely chopped for garnishing PROCEDURE: In a mixing bowl combine maida,baking soda,besan,cardamom pdr  In another bowl whip ghee and sugar pdr together with a hand mixer till it becomes a smooth mixture(1 minute on low speed and 2 mins on high speed) Slowly fold the flour mixture into the sugar mixtureand knead together Now make small size ballsand presson top with your palmto flatten it a bit, and place the nutson top as garnish Place the balls on a baking tray with 1 inch gap Bake at 300 F/ 180C in pre heated oven, for 10 to 12 mins Keep a close eye after 9 mins, as it can burn easily Take it out and rest for 5 - 10 mins , as they are very  soft and can break if you try to eat it immediately

Ice cream Cake

INGREDIENTS: Chocolate cake Vanilla icecream Chocolate sauce as required Nuts and raisins for topping PROCEDURE: Halve the cake horizontally .Place one slice at the base of tha spring form tin. Spread chocolate sauce evenly over the cake ,followed by a thick layer of  vanilla iceceam Keep the other slice of the cake on it .Repeat the procedure  Garnsh with the nuts and raisins ,keep in the freezer to set Once it is set enjoy the icecream cake.

INGREDIENTS: 2 cups white sugar powder 1 3/4 cup all purpose flour/ maida 3/4 cup unsweetened cocoa powder 1.5 tsp baking powder 1.5 tsp baking soda 1 tsp salt 2 eggs 1 cup milk 1/2 cup vegetable oil 2 tsp vanilla essence 1 cup boiling water PROCEDURE: Preheat oven to 350 degreesF(175 degreeC) Grease and dust the baking dish and keep aside In a large bowl seive together sugar pdr,cocoa pdr,flour,baking pdr,baking soda and salt Add the eggs,milk,oil and vanilla essence,mix for 2 mins on medium speed of mixer Put the boiling water and mix again Pour evenly into the greased dish  Bake for 30-35 mins in the pre heated oven,until the cake tests done with a tooth pick Cool in the baked cakefor 1o mins and then remove to a wire rack to cool completely!!

2 Mins Mug Cake

The recipe of this yummy and quick cake belongs to my FB friend Preethi Prasad !! This is a mug cake prepared in Microwave in just 2 mins.tastes awesome so sharing the recipe with you all !! Tried it with some variations according to our taste! INGREDIENTS: 1/4 cup maida/ all purpose flour 2 tsp cocoa powder 2.5 tblsp sugar powder 1/4 tsp baking powder 1/4 cup+ 1 tblsp milk 2 tblsp oil 2 tsp milkmaid(optional) 2 tsp nuts chopped (optional) PROCEDURE: Mix all the dry ingredients in a bowl Whisk milk and oil slowly Fold in all the ingredients and mix well Pour in a mug and micro it for 2 mins  And your cake is ready !! NOTE:Adding milkmaid is not in the original recipe!

INGREDIENTS: 1 cup milk 1 cup sugar 1 1/2 cups maida / all purpose flour 3 tblsp cocoa pdr 1/2 tblsp baking pdr 1/2 tblsp baking soda 1/2 cup oil 1/2 tsp vanilla essence 2 tblsp lime juice PROCEDURE: In a mixing bowl put milk and sugar and mix until sugar dissolves. Add vanilla essence and mix seive all the dry ingredients and add to the sugar, milk mixtue add oil and give a nice stir Finally add lime juice and mix Butter the MW dish and Micro it   for 5 mins  Cool it for 10 mins and then cut into pieces

INGREDIENTS: 1 1/4 cup maida/all purpose flour 1 tsp baking soda 1/2 tsp baking powder 1/4 cup cocoa powder 1 cup sugar powder 1/3 cup melted butter or any refined oil 1/2 cup milk(room temp) 1/2 cup hot coffee(1/4 tsp instant coffee added to 1/2 cup hot milk) 1/4 cup yoghurt/curd 1 tsp vanilla essence pinch salt PROCEDURE: Preheat oven at 180 degree  Seive cocoa,maida ,salt,baking soda and baking powder 3 times. INGREDIENTS: 1 cup maida 1/4 cup cocoa powder 3/4 tsp baking soda 1/2 cup oil 2 tblsp milkmaid 3/4 cup sugar powder 1 1/2 tsp vanilla essence 1 cup milk (room temp.) 2 tblsp water PROCEDURE: In abowl mix maida ,cocoa,soda,mix well and seive 2 times In other bowl whisk oil,sugar,vanilla,milk and 2 tblsp milkmaid/condensed milk Add flour mixture to this lil by lil.Add water and mix well Microwave for 6-7 mins Check after 5 mins Let the cake remain untouched for 10-15 mins
