Heerekayi Yennegayi
Heerkayi is also called Ridgegourd in English and Ghosale in Konkani. Stuffed vegetable curry is called Yennegayi in North Karnataka. Badnekayi yennegayi (stuffed brinjal) is very popular in Hubli Dharwad ., which goes well specially with Jolada Rotti /Jowar rotis.
INGREDIENTS:
250 gms ridgegourd
1 chopped onion
3 garlic cloves
4 tsp curry leaves
3 sp peanuts
3 tsp grated dry coconut
2 tsp chilli powder
1/2 tsp turmeric powder
1 tsp cumin seeds(jeera
1/2 tsp garam masala(optional)
1 tsp tamarind pulp
4 tsp oil
1 tsp mustard
Salt to taste
Jaggery to taste (optional)
Coriander leaves
PROCEDURE:
- Wash and peel the ridgegourd and cut into 2 inch pieces
- In 1/2 tsp oil fry onion,garlic and 2 tsp curry leaves till the onion becomes translucent
- Dry roast peanuts
- Grind roasted onion, with roasted peanuts.dry coconut grated, and all other spices,salt to taste with little water
- Make a cut on one side of ridgegourd piece and stuff with masala
- In a pan heat oil ,add mustard, curry leaves and stuffed ridgegourd pieces
- Add 1/2 cup water,tamarind pulp and cover with a lid and cook till it becomes soft
- Garnish with chopped coriander leaves
- Serve hot with roti
- You can also substitute ridgegourd with brinjal or capsicum
