Kaaju Masala


This yummy recipe of side dish for roti belongs to APARNA KAMATH!!

INGREDIENTS:
Kaaju (cashew nuts) 1 1/2 cups
Pureed tomato 3
ginger garlic paste 1 tsp
oil 1 1/2 tblsp
ghee 1 tblsp

FOR ONION PASTE;
2 onions
cinnamn 1 inch
cloves 4
2 cardamoms
1 tblsp coriander seeds
1 tsp cumin seeds
5 red chillies
1/2 tsp Kitchen King Masala
1/2 tsp garam masala
1/4 tsp amchur (dry mango powder)
3 tsp kasuri methi (dry feenugreek leaves)
A pinch of sugar
Salt to taste

PROCEDURE:

  • Make onion paste without water
  • In ghee roast nuts and keep
  • In same pan heat oil and fry onion paste till nicely brown and raw smell goes
  • Add ginger garlic paste ,kasuri methi,and fry for a minute
  • Add garam masala,kitchen king masala,amchur.
  • Put tomato puree and fry for 5 minutes
  • Add sugar,salt and 1 cup water and boil
  • Add nuts and mix
