Stuffed Brinjal
This is one of the simple,easiest and yummy stuffed brinjal recipe I've tried!!This recipe belongs to my FB friend Sabitha shenoy! Thanks to Sabitha nad Priya R. Shenoy whose yummy post inspired me to prepare this!!Wonderful recipe with less ingredients!! goes well with roti and rice!!
INGREDIENTS:
10 nos of small sized brinjals
FOR THE MASALA:
2 medium onions finely chopped
2 1/2 tsp red chilli powder
1/2 tsp vangi bhaat powder (optional)
1/2 tsp tamarind paste or amchur powder
Salt to taste
FOR TEMPERING:
4 tsp oil
1 tsp mustard
2 tsp urad dal
1 sprig curry leaf
PROCEDURE:
- Wash and cut the stem of brinjals
- Make a slit and put in the salt water
- Mix the masala ingredients and stuff the brinjals
- In a kadai take oil and add the tempering ingredients and fry for 2 minutes
- Add the stuffed brinjals and keep covered till it is cooked
- Serve hot with roti or rice
