Arbi ka Salan
INGREDIENTS:
1 cup Boiled and peeled Arbi cut into thick slices
4 tsp oil
Salt to taste
Chopped coriander leaves for garnishing
1/2 tsp amchur powder
For the masala:
4 red chillies
1 tsp coriander seeds
3 tsp roasted peanuts
Make fine powder of the above ingredients
For tempering:
1 tsp mustard
curry leaves
1 tsp cumin seeds
1/2 tsp turmeric powder
1 tsp ginger garlic paste
1/4 tsp red chilli powder
PROCEDURE:
- In a kadayi heat oil and add mustard,curry leaves ,cumin seeds
- When mustard starts crackling add turmeric,chopped onion and fry for 5 minutes
- Add ginger garlic paste and fry for 3 minutes
- Put red chilli powder and ground masala powder
- Add arbi slices,salt and 1/2 cup water
- Make it boil for 5 minutes
- Add 1/2 tsp amchur powder
- Garnish with chopped coriander leaves
