Soya Matar ki Gujiya


INGREDIENTS FOR THE OUTER COVERING:
5 tblsp maida / all purpose flour
1 tblsp fine soji / semolina// rava
2 tblsp ghee / oil
Salt to taste

FOR THE STUFFING:
1 cup cooked and slightly crushed fresh green peas
1/4 cup soaked soya granules
3 crushed / finely chopped green chillies
1/2 inch ginger finely chopped
1 tsp roasted cumin pdr
1/2 tsp turmeric pdr
1/2 tsp chat masala
1/2 tsp asafoetida pdr
1/2 tsp amchur pdr
Salt to taste
chopped coriander leaves
2 tsp oil

Oil for deep frying


PROCEDURE:
  • In a bowl take maida,salt ,soji and ghee and mix with your fingers till it resembles the bread crumbs
  • Add water and knead the dough and keep for 1/2 an hour
  • In a kadai take oil   and put the crushed ginger,chilli and fry for a min
  • Add crushed green peas, soya granules and all other spices one by one
  • Add salt and toss well and remove from the flame
  • Take the dough and devide into portions and make small balls
  • Roll the balls into puris , keep 2 -3 tsp stuffing and fold it into semi circle
  • Seal the edges tightly by folding or pressing with a fork
  • Heat the oil and deep fry them into crisp gujiyas
  • Serve hot with any chutney
