Kadai Aloo


INGREDIENTS:
2 boiled potatoes cut into dices
1/4 cup capsicum pieces
1 tomato chopped
2 green chillies slit
4 tsp oil
1/2 tsp asafoetida pdr/hing
1 tsp cumin seeds/ jeera
1 inch ginger finely chopped
1/2 tsp turmeric /haldi pdr
2 tsp coriander pdr
1 tsp cumin pdr
2 tsp red chilli pdr
2 -3 tsp cashewnut pdr
2 tblsp curd
1 tsp kasuri methi 
Salt to taste
chopped coriander leaves

PROCEDURE:
  • In a pan heat oil and put jeera,hing,green chillies and fry
  • Add ginger chopped,capsicum and tomato cubes and fry for 5 mins
  • Add all the spice powders and fry for a minute
  • Put the curd ,cashew nut pdr and saute again
  • Add boiled potato cubes,salt to taste and 1/2 cup water 
  • Put kasuri methi and boil it for 5 mins
  • Garnish with chopped coriander leaves and serve hot with roti
