Mexican Green rice

INGREDIENTS:
1 cup basmati rice washed n soaked in water for 15 mins
1 sliced onion
6 tsp oil
Salt to taste
1/4 cup chopped spinach leaves
1 tsp lime juice

GRIND THIS INTO FINE PASTE:
Roast 1/2 capsicum and 1 small onion on gas flame
Remove its black skin and clean it
Grind it with 5 garlic cloves,2 green chillies and 1/4 cup coriander leaves into a fine paste

PROCEDURE:
  • In cooker heat oil and saute sliced onions till it becomes translucent
  • Put the ground masala and fry  till it loses its rawness
  • Add the rice and fry for 5 mins
  • Put 1 1/2 cups water,lime juice,salt and chopped spinach ,mix well
  • Close the cooker lid and cook for 2 whistles
  • Your rice is ready to serve
