Garlic potato


INGREDIENTS
15 nos baby potatoes boiled (dont overcook)
3 tsp + 4 tsp oil
1 tsp mustard
8 garlic cloves finely chopped
Chopped coriander leaves

FOR THE MASALA PASTE:
In little oil roast 5 red chillies and grind with tamarind,4 garlic cloves and 1/2 inch ginger into a smooth paste and keep aside

PROCEDURE:

  • Peel the potatoes and apply salt to taste and keep for 15 mins
  • In a non-stick pan heat 3 tsp oil ,add mustard ,once it starts crackling add the potatoes and fry for 5 mins or till the outer cover of potatoes becomes brown
  • Transfer the potatoes in a bowl and put the remaining oil in the same pan,add the chopped garlic and fry till brown
  • Add 3 tsp masala paste and fry till raw smell dissappears
  • Put the roasted potatoes and cook for another 10 mins on a low flame 
  • Garnish with chopped coriander leaves and serve with rice !!
