Cream of mushroom soup


INGREDIENTS:
4  button mushrooms,washed and finely chopped
2 tblsp butter
1 finely chopped onion
5 finely chopped garlic cloves
3 tsp maida
2 cups water or veg.stock
1 cup milk
2 tblsp fresh cream
1 tsp crushed pepper corns
Salt to taste
2 tblsp finely chopped spring onion greens

PROCEDURE:

  • Heat butter in a pan ,add chopped garlic ,onion and saute till it becomes light pink in colour
  • Add the chopped mushrooms and saute till they shrink and cooked
  • Add in maida and fry continuously for 3-4 mins ,followed by water or veg.stock ,mix well 
  • Oncw it starts boiling add salt ,and milk,cream and give a quick boil  
  • Turn off the flame,garnish with pepper and spring onion greens
  • Serve hot !!!
