Bibbo Tendle Sukke


INGREDIENTS:

1/2 cup tender cashewnuts/ bibbo (peeled)
1 potato cut into small cubes
1 cup tendle/ gerkins cut into 4 pieces
Salt to taste

FOR THE MASALA PASTE:
In 1/2 tsp oil roast 2 tsp urad dal and 4 red chillies3
Grind roasted dal and chillies with 3/4 cup grated coconut and little tamarind into a semi coarse paste 

 FOR TEMPERING:
4 tsp oil
2 tsp mustard
2 sprigs of curry leaves

PROCEDURE:

  • Cook tender cashews, chopped gerkins ,potato with 1/2 cup water in cooker for 2-3 whistles
  • Transfer the cooked veggies in a pan,add salt to taste,ground masala paste and water if needed
  • Make it boil for  5-10 mins and add the tempering with the ingredients mentioned
  • Mix well and serve hot with rice and dal!!!
