Andhra Style Mavinkai Chitranna / Raw mango rice
INGREDIENTS:
1 cup cooked rice
5 tsp oil
2 tsp chana dal
1 tsp mustard
2 tsp urad dal
3 tsp peanuts
1 red chilli
Curry leaves
1/2 tsp turmeric pdr
Salt to taste
Chopped coriander leaves
INGREDIENTS TO BE GROUND:
In 2 tsp oil fry
2 tsp jeera/ cumin seeds
1/2 tsp hing / asafoetida
2 tblsp grated coconut
3 red chillies
3 tsp grated raw mango
Roast these for 5 mins and make a dry paste
PROCEDURE:
- Heat oil in a kadai, add mustard, when it starts crackling add curry leaves, chana dal,urad dal,peanuts and fry till the nuts turn light brown and crisp
- Add turmeric pdr,red chilli bits and ground paste. Fry for a while and add the cooked rice
- Add salt to taste and toss well. Garnish with chopped coriander leaves.
- Serve hot with raita or wafers.
