Avarekaalu Usli / Hyacinth beans stir fry


INGREDIENTS:
1 cup avarekaalu / hyacinth beans boiled
4 tsp oil
1 tsp mustard
1 tsp jeera/ cumin seeds
1/2 inch ginger piece
3 green chillies finely chopped
1 sprig of curry leaves
1/2 tsp turmeric pdr
1 chopped onion
Salt to taste
Chopped coriander leaves 
1 tsp lemon juice
Dry roast 1 tsp jeera and 4-5 methi seeds and make powder

PROCEDURE:
  • In a pan heat oil, add mustard. Let it crackle, add curry leaves,turmeric powder,chopped green chillies,chopped ginger and jeera
  • Fry for a second, add chopped onion and saute till it turns ligt brown
  • Now add in the boiled beans, salt to taste and crushed jeera and methi powder
  • Mix well and let it cook  for 5-10 mins
  • Turn off the flame ,add chopped coriander leaves and lemon juice and toss well
  • Serve hot with rice or roti.
