Hariyali Chole



 



INGREDIENTS:

Ingredients for the chole masala powder:

2 tsp coriander seeds/ daniya

1 tsp cuminseeds/ jeera

2 cloves/ lavang

10 pepper corns/kali mirch

1 inch cinnamon/ dalchini

1 piece javyatri

10-12 sookha amla

Dry roast the above ingredients and make fine powder. Store in an airtight container.


INGREDIENTS FOR CHOLE:

250 gms kabuli chana / white chick peas

2 finely chopped onions

2 finely chopped tomato

4 tsp oil

1/2 tsp turmeric/ haldi powder

2 tsp red chilli powder

1/2 tsp coriander/ daniya powder

1/2 tsp cumin/ jeera powder

2 tsp chole masala powder

1/2 tsp kasuri methi

Salt to taste

Chopped coriander leaves

FOR THE GREEN MASALA:

Grind 1/2 cup coriander leaves with 1 green chilli,1/2 inch ginger,4 garlic cloves,4-5 blanched palak leaves(optional). Grind these into a fine paste.

PROCEDURE:

  • Heat oil in a pan, add onions and saute till transparent
  • Add chopped tomato and fry till they turn mushy
  • Add the ground green masala and fry till the raw smell goes
  • Now add all the spice powders and fry for a second
  • Drop in the boiled chana,salt to taste and give a nice mix
  • Add 1/2 cup water and let it boil for 10 mins
  • Add kasuri methi and mix well, turn off the flame
  • Garnish with chopped coriander leaves and serve hot with poori, chapati or naan.
