Paushtik Parantha
INGREDIENTS:
1 cup wheat flour
1/4 cup Soya bean atta
Salt to taste
Water to knead the dough
Mix the above ingredients and make a soft dough and keep for 1/2 an hour
For the filling:
1/2 tsp oil
1 tsp jeera
1 chopped onion
1/4 cup grated gobi(cauliflower)
1/4 cup grated cabbage
1/4 cup grated carrot
1 boiled and mashed potato
1 tsp chilli powder
1 tsp garam masala
1/2 tsp chat masala
Coriander leaves
PROCEDURE:
- In a pan take oil and add jeera
- Add chopped onion and saute it for 5 minutes
- Add all grated veggies and cook for 5-10 minutes
- Add all spices, salt to taste ,coriander leaves and mix well
- Make roti and keep around 3 ts of filling and cover it
- Roll it and make thick roti
- Heat tava and cook parantha with oil or ghee
- serve with dal or curds and pickle
