Palak Tomato Rice


INGREDIENTS:
1 cup basmati rice (wash n soak in water for 15 mins)
2 sliced onions
1/4 cup corn kernels
1 chopped carrot
6 tsp oil or ghee
Salt to taste
1/2 tsp lime juice
chopped coriander leaves for garnishing

FOR THE MASALA:
8 palak /spinach leaves
1 tomato
1/2 tsp  turmeric powder
1/2 tsp biryani masala
2 green chillies
4 garliccloves
1/2 inch ginger
1/4 onion chopped
Wash the palak leaves and micro it for 2 mins and grind with the other ingredients into a fine paste.
PROCEDURE:

  • In cooker heat oil and saute onion slices till light pink in colour
  • Add the masala n fry for 5 mins
  • Put the soaked rice ,veggies,salt to taste and give a nice stir
  • Add 1 1/2 cups of water and close the lid and take 2 whistles
  • When steam is released open the cooker and add lil lime juice and chopped coriander leaves
  • Serve hot with raita
