Aloo Parval ki sabji


INGREDIENTS:
2 potatoes 
4 parvals / Pointed gourd / Goint 
5 tsp oil
1tsp cumin seeds / jeera
3-4 methi seeds/ fenugreek
1/4 tsp hing / asafoetida
1/2 tsp turmeric / haldi pdr
2 tsp red chilli pdr
1 tsp goda masala or garam masala
Salt to taste
1/2 cup fresh curds
chopped coriander leaves for garnishing

PROCEDURE:

  • Wash, peel and cut the potatoes into cubes
  • Wash and slightly scrape the outer skin of parval and cut into cubes
  • In a cooker heat oil ,add jeera,methi and hing,fry for a minute
  • Add parval,potato cubes,salt to taste and all the spice powders ,1/4 cup water and close the lid
  • Take 1 or 2 whistles,open the lid after steam is released
  • Add curds and cook for 2-3 mins,garnish with chopped coriander leaves
  • You can also prepare this in kadai !!
