Veg.fried rice with veg.balls in hot garlic sauce
INGREDIENTS FOR FRIED RICE:
2 cups rice
1/2 cup finely chopped carrot,beans and capsicum
3 sliced spring onion bulbs
1/4 cup finely chopped spring onion greens
1 tsp vinegar
1/2 tsp ajinamoto(optional)
1 tsp pepper pdr
1 slit green chilli
4 garlic cloves chopped
Salt to taste
6 tsp oil
PROCEDURE:
- Wash and cook rice with salt to taste and 3 1/2 cups water in cooker for 2-3 whstles(dont overcook )
- Spread rice on a plate and make it cool
- In a kadai heat oil ,add chopped garlic,green chilli and spring onion bulbs chopped
- Saute for a while on high flame,add veggies,salt and cook for 5 mins
- Add rice,vinegar,ajinamoto,pepper pdr and toss well
- Garnish with spring onion greens!!
INGREDIENTS FOR VEG.BALLS:
2 cups grated veggies like cabbage,carrot,cauliflower
1 tsp ginger garlic paste
Salt to taste
1 tsp pepper pdr
4 tblsp corn flour
2 tblsp maida
Mix well the above ingredients ,make balls and deep fry till golden brown and crisp!
INGREDIENTS FOR THE SAUCE:
5 tsp oil
8 finely chopped garlic
1 inch ginger finely chopped
1 green chilli chopped or slit
4 spring onion bulbs finely chopped
4 tblsp CHINGS SCHEZUAN CHUTNEY
2 TSP CHINGS SCHEZUAN SAUCE
2-3 tsp soya sauce
2-3 tsp soya sauce
Salt to taste
3 tsp corn flour
1/4 cup finely chopped spring onion greens
PROCEDURE:
- In a bowl dilute corn flour in 1/2 cup water and keep aside
- In a pan heat oil and on a high flame saute chopped onion,garlic,green chilli,ginger for 3-4 mins
- Add schezuan chutney, schezuan sauce,soya sauce and 3 cups water
- Make it boil and add corn flour slurry
- Boil till the gravy thickens and add the fried balls and cook for 2 mins
- Add salt if needed ,because the schezuan chutney contains salt
- Garnish with spring onion greens and serve hot with rice or noodles!!
Note:If u want to make it more spicy then add pepper powder!!
