Baingan Masala

2 cups baingan/brinjal cut into wedges(any variety)
4-5 tsp oil
curry leaves
1/2 tsp turmeric pdr
1 onion  sliced
1 tomato finely choopped
2-3 tsp sambar or rasam pdr
2 tblsp roasted and crushed peanuts
Salt to taste
Chopped coriander leaves


  • In a pan heat oil ,add  curry leaves and sliced onions, saute till onion becomes transaparent
  • Add tomato chopped and fry till it becomes pulpy
  • Put the baingan chopped,salt and cover with a lid till it is cooked
  • add sambar pdr,crushed peanut pdr,chopped coriander leaves and toss well 
  • Serve hot with hot phulkas!!!
